Galangal/Thai Ginger - Alpinia galanga
Galangal, also known as Thai Ginger, is an essential ingredient in Thai cuisine. Both the rhizomes and leaves are used for culinary & medicinal applications.
Galangal is a versatile plant that makes a great addition to a subtropical food forest. It's juicy leaves make excellent chop & drop material and it's clumping nature means the plant gets bigger and stronger year after year. Unlike some of it's Ginger relatives, Galangal doesn't go fully dormant during the winter and will persist even in drier than ideal conditions. It tolerates full sun much better than other Gingers, but prefers to grow in light shade, making it a perfect understory plant in the food forest.
Alpinia galanga, also known as Greater Galangal.
