Ice Cream Bean trees play an essential role in tropical/subtropical food forest systems. They are nitrogen fixing trees that grow relatively fast and can handle constant pruning, providing lots of shade and fertility to understory plants.They produce an abundance of beautiful seedpods that contain an edible pulp that surrounds the seeds. The taste is mildly sweet with faint notes of vanilla.

SEEDS: Each seedpod contains around 5-8 seeds depending on the size. The seeds are fairly fragile so be cautious when eating the pulp. The seeds do not store well and should be planted immediately!

GROWING NOTES: Ice Cream Bean trees are susceptible to frost damage, especially when young. It’s recommended to plant in a sheltered location or plant lots of support species to help mitigate frost damage.
